Lanzhou beef noodles come in a variety of shapes, handcrafted by noodle masters according to each customer’s preference. Based on their cross-sectional form, the noodles are categorized into three main types: round, flat, and ridged.

  • Round noodles: These have a circular cross-section and vary in thickness — from ultra-thin “Mao Xi” (hair-thin), to thin, medium (“San Xi”), and thicker (“Er Xi”) noodles.

  • Flat noodles: These have a flattened shape, ranging from narrow to wide, such as “Chive Leaf,” “Thin Wide,” and “Big Wide.”

  • Ridged noodles: These feature triangular or polygonal cross-sections. A common type is the “Buckwheat Ridge” (San Leng Zi), known for its unique texture and shape.

Known as “Gua Wan Zi”, it cools the body and cuts through the richness.
